1 cup rolled oats
200g carrots, grated
¼ cup water
½ cup grated reduced-fat cheddar cheese
Pinch of salt
Pre-heat the oven to 180oC. Line a 20cm x 20cm slice tray with baking paper.
Blend oats in a food processor until a smooth powder.
Mix the carrot and water in a bowl, cover and microwave on high for 3 minutes. Drain and place on a clean cloth or paper towel and squeeze out the liquid.
Place carrots in a bowl and mix with the oat flour, cheese, eggs and pinch of salt. Pour into the lined slice tray and smooth evenly.
Bake for approximately 15 minutes or until golden and cooked through.
Freeze in two layers with baking paper between each layer.
