4 cups broccoli florets
400g rump steak, cut into strips
2 tsp ground coriander
1 brown onion, cut into wedges
2 cloves garlic, crushed
2cm piece ginger, finely chopped
3 tbsp reduced-salt soy sauce
1 tsp sesame oil
3 spring onions, chopped
Egg or rice noodles
Olive oil spray
Steam or microwave broccoli for 2-3 minutes or until just tender.
Sprinkle the beef strips with the ground coriander.
Spray a large fry pan or wok with olive oil and heat over medium high heat. Add the onion, garlic and ginger and fry until the onions begin to soften. Add the beef and stirfry for a couple of minutes until browned. Add the broccoli and fry for a further 2 minutes.
Add the soy sauce and sesame oil to the pan and stir until well coated.
Serve with egg or rice noodles sprinkled with chopped spring onions.
1 ½ serves of vegies in each serve of this recipe.
