Curried eggs

Serves: 3
Preparation time: 10 minutes

Ingredients

3 large eggs, hard boiled & shelled
2 tsp curry powder
Pinch of paprika
Pinch of salt & pepper
ΒΌ cup reduced-fat plain yoghurt

Method

In a large bowl, mash the eggs with a fork. Add the curry powder, paprika, salt and pepper and mix well. Stir through the yoghurt until combined.

Variation

Add a sprinkle of sultanas, finely sliced spring onions and sunflower seeds for a twist on the classic.
