Apple pie overnight oats
½ cup rolled oats
2 tbsp unsweetened apple sauce
1 tbsp reduced-fat plain yoghurt
½ tsp honey
¼ tsp cinnamon
Pinch of nutmeg
½ cup reduced-fat milk
½ apple, chopped
Place all ingredients except the apple into a wide mouth plastic container or bowl. Place the lid on the container and shake well to combine (or stir if in a bowl and cover with plastic wrap).
Refrigerate overnight. When ready to serve or pack, stir in chopped apple.
Variation: Carrot cake overnight oats
Replace the apple, apple sauce and honey with ½ a grated carrot and ¼ cup of chopped dates.
