Turkish, avocado, ricotta & tomatoes
100g fresh Ricotta cheese, preferably reduced fat
1 small avocado, mashed
½ lemon, juiced
1 punnet cherry tomatoes, halved
½ tbsp fresh thyme leaves, destemmed
½ tbsp olive oil
Pinch salt & pepper, to taste
4 pieces of Turkish bread, split
In a bowl, mix the ricotta cheese, avocado and lemon juice. Spread on bread.
Toss tomatoes, fresh thyme, olive oil, salt and pepper in a medium bowl. Spoon on top of the avocado.
- Ricotta mix can also be used as a sandwich and wrap spread.
For a delicious breakfast treat, serve on toasted Turkish bread with a poached egg.
