Ingredients

100g dates, pitted
3 tbsp honey or maple syrup
2 ripe bananas, mashed
1 apple, peeled & grated
100g margarine
100ml hot water
100g pepitas
100g raisins
250g rolled oats
75g dried apricots

Method

Pre-heat the oven to 160oC. Line a 20cm x 20cm slice tray with baking paper.

Place dates in a bowl and just cover with boiling water. Leave to soak for 5 minutes. Place the dates along with the water into a blender and process until smooth.

Heat the margarine, honey or maple syrup in a small pan until melted. Add the mashed banana, apple and 100ml hot water and mix. Add the processed dates and mix again.

Place the oats, dried fruit and seeds into a large mixing bowl. Pour in the wet mixture and stir until combined. Tip into the slice tray and level the surface. Bake for 55 minutes or until golden.

Leave in the tin to cool, then cut into 16 bars and store in an airtight container for up to 4 days.
