Ingredients

500g lean beef mince  
½ tin red kidney beans, drained, rinsed
1 small red onion, chopped  
¾ cup corn kernels  
2 tbsp coriander, finely chopped  
½ tbsp our Healthy taco seasoning mix (see below)
½ cup our Mexican salsa
Olive oil spray  

 

Healthy taco seasoning mix 
1 tsp garlic powder 
1 tsp onion powder 
1 tsp dried oregano 
2 tsp paprika 
6 tsp ground cumin 
1 tsp salt 
½ tsp ground pepper 

Method

To make the Healthy Taco Seasoning, mix everything together in a small bowl. This recipe makes bulk seasoning, store in an airtight container until required.

Preheat oven to 180°C. Line a large baking tray with baking paper.  

Combine the beef, beans, onion, corn, coriander, taco mix and salsa in a large bowl. Mix well. Form into 2.5cm round balls.  Makes 20 meatballs.

Place on baking tray. Spray with oil. Bake for 20 minutes or until cooked through.  

Serve with salad or our guacamole. 

 Tip 

  • Use this mix to make Mexican burger patties. Simply split into 4 equal portions and shape into burger patties.  

Healthy taco seasoning mix 

Mix everything together in a small bowl. Store in an airtight container until required. 

Store in an airtight jar for up to six months.
