Ingredients
500g lean beef mince
½ tin red kidney beans, drained, rinsed
1 small red onion, chopped
¾ cup corn kernels
2 tbsp coriander, finely chopped
½ tbsp our Healthy taco seasoning mix (see below)
½ cup our Mexican salsa
Olive oil spray

1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
2 tsp paprika
6 tsp ground cumin
1 tsp salt
½ tsp ground pepper
Method
Step 1
Preheat oven to 180°C. Line a large baking tray with baking paper.
Step 2
Combine the beef, beans, onion, corn, coriander, taco mix and salsa in a large bowl. Mix well. Form into 2.5cm round balls or 20 round balls.
Step 3
Place on baking tray. Spray with oil. Bake for 20 minutes or until cooked through.
Serving suggestion
- Serve with salad or our guacamole.
- Use this mix to make Mexican burger patties. Simply split into 4 equal portions and shape into burger patties.
Ingredient swaps
- You can use a commercial taco or fajita seasoning mix and salsa to save time.
- You can use ½ tbsp of ground cumin in place of taco seasoning.

- You can save money by using home brand beans and corn.
Reduce waste
- Use left over red kidney beans and corn kernels in a burrito bowl.
- Leftover meatballs can be frozen in an airtight container.

- Choose lean beef mince instead of regular fat mince to reduce saturated fat intake.
- This recipe is good for adding more veg into diets.
Healthy taco seasoning mix
Mix everything together in a small bowl. Store in an airtight container until required.
This mix can be stored in a airtight jar for up to six months.
