Ingredients

Olive oil spray
2 cups spelt or wholemeal plain flour
1 cup rolled oats
1 tbsp baking powder
1 tbsp cinnamon
Pinch salt
½ cup olive oil
½ cup honey
½ cup reduced-fat milk
1 tsp vanilla extract
1 cup grated carrot
½ cup raisins
1 very ripe pear, mashed

Method

Pre-heat the oven to 190oC. Lightly spray a 9” x 5” loaf pan with olive oil.

Whisk together the flour, oats, baking powder, cinnamon and pinch of salt.

In a small bowl, stir together the olive oil, honey, milk and vanilla extract, then add to the dry ingredients. Stir until mixed. Fold through the carrot, raisins and pear.

Pour the mix into the loaf pan and bake for 45 minutes. Let cool completely before removing from the pan. Cut into 12 slices.

Variation

Replace the carrot and raisins with 2 mashed bananas and ½ cup chopped dried apricots.
