Beetroot and spinach bliss balls

Ingredients
1 cup pitted dates, chopped
¼ cup finely grated beetroot
¼ cup finely chopped baby spinach
½ cup rolled oats
1 tbsp chia seeds
1½ cups shredded coconut
Method
Place all ingredients except half a cup of shredded coconut in a high-speed food processor and process until smooth. Roll into balls and then roll in the remaining ½ cup of shredded coconut.
Place in the freezer for 1 hour to set.
Tip
Beetroot stains, so protect your benchtops and wear gloves when peeling and slicing it.
Variation: Chia, cocoa, honey and coconut bliss balls

½ cup rolled oats
1 tbsp chia seeds
2 tbsp cocoa
1 tbsp honey
1 cup desiccated coconut
Place all ingredients except half a cup of shredded coconut in a high-speed food processor and process until smooth. Roll into balls and then roll in the remaining ½ cup of shredded coconut.
