Stir fry vegetables
Serves: 4
Preparation time: 15 minutes
Cooking time: 10 minutes


Olive oil spray
1 medium onion, thinly sliced
1 cup thinly sliced carrots
2 cups broccoli florets
2 cups sugar snap peas
1 red capsicum, sliced
1 tbsp reduced-salt soy sauce
1 tsp garlic powder
1 tsp ground ginger
2 tsp sesame seeds


Spray a non-stick pan with olive oil spray and heat over medium-high heat. Add onion and carrots and stir fry for 2 minutes. Add remaining vegetables and stir fry for 5 minutes or until vegetables are crisp but tender.

Add soy sauce, garlic powder and ground ginger. Stir fry until well mixed. Sprinkle with sesame seeds.

2 serves of vegies in each serve of this recipe.
