3 avocados, peeled & deseeded
½ small red onion, finely diced
1 bunch fresh coriander, finely chopped
6 cherry tomatoes, finely chopped
2 limes, juiced
Pinch of salt
Cracked pepper to taste
In a bowl, mash the avocado with a fork. Add the onion, coriander, tomatoes and half the lime juice. Season with a pinch of salt and pepper. Taste and add more lime juice if required.
1 serve of vegies in each serve of this recipe.
