Lamb and veg meatballs

600g lean lamb mince
2 zucchinis, grated
2 carrots, grated
1 brown onion, finely diced
2 large handfuls baby spinach, finely chopped
½ tsp ground cumin
½ tsp ground coriander
2 eggs
1 cup wholemeal bread crumbs
Pinch of salt


Pre-heat the oven to 200oC. Line a baking tray with baking paper.

Mix all ingredients together in a bowl until combined. Shape into golf ball sized balls and place on the baking tray. Bake for 20-25 minutes or until browned and cooked through.


Add the cooked meatballs to an oven safe dish, mix with our tomato sauce and top with a sprinkle of reduced-fat grated cheese. Place in the oven for 15 minutes or until the cheese is golden.

½ serve of vegies in each serve of this recipe.
