Mixed salad
Serves: 6
Preparation time: 10 minutes



6 cups baby spinach
1 cup cherry tomatoes, halved
1 cucumber, sliced
½ red capsicum, sliced
¼ red onion, thinly sliced
1 cup canned corn, drained


3 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tsp honey
½ tsp Dijon mustard
Pinch of salt


Combine all the salad ingredients in a large bowl.

Add all the dressing ingredients to a small jar and shake to combine.

Just before serving, drizzle the salad with the dressing and toss to coat evenly.

2 serves of vegies in each serve of this recipe.
